Two Easy Blender Recipes

Creamy Cashew Mustard and Beet Coconut Lime Dressing

 

Incredibly easy and flavorful dressings ready in under 5 minutes each! Both super versatile, delicious, dairy-free and plant-based :)


The day I shot these recipes was a dream come true. It all started how a lot of relationships start nowadays, by sliding into DMs on Instagram. I reached out to Natalie over at Feasting on Fruit (PLEASE check out her blog...seriously such sweet deliciousness going on over there) because I was just blown away by all of her simple yet delicious sweet treats and wanted to tell her. Ironically, I found out she lives only 30 minutes from where I just moved to. I just moved from CT to FL about a month ago and I thought it would be so tough to make connections down here so I like to think it's a little glimmer of fate in action. Anywayyyyy, long story short we met up for some tea and the rest is history. We talked about doing a collab as she thought it would be fun to shoot something savory for a change and I thought it would be fun to fulfill my lifelong dream of being a food blogger for a day. And that is how these recipes came to life. Natalie is so talented at what she does and that day was so much fun for me! Aside from that these recipes are simple, nutritious and delicious and I hope you love them.


My favorite thing about these "dressings" are that they are so versatile. With just a simple tweak of water content they can either be dressings, dips or sauces.

And just so you know for the future, recipes are just a guideline, not a set of rules. You don't need to be a trained chef to cook something delicious in the kitchen. I promise you that. You just have to open to some creativity.


Watch the video below to see how easy these dressings are to make and then make them STAT! Follow the recipes perfectly or wing it using them as a guideline. You can't really go wrong...I mean you can, but whats the worst that can happen if you "mess" up your salad dressing? Much bigger issues in this world...am I right? You'll just adjust for next time and that is exactly how cooking goes.




Creamy Cashew Mustard Dressing

 

Ingredients:

1/4 cup cashews, soaked in hot water

1 small garlic clove

2 Tablespoons apple cider vinegar

2 Tablespoons whole grain mustard

1/4 cup extra virgin olive oil

s+p to taste

water, for desired consistency


Instructions:

  1. Soak cashews in hot water for 30 min, then rinse and drain.

  2. Combine all the ingredients for the Creamy Cashew Mustard Dressing in a high powered blender and blend for 60 seconds until very smooth. Adding water until desired consistency is reached.

  3. Taste and adjust salt and pepper as needed. Serve immediately. Or you can refrigerate the vinaigrette for later use. It will thicken as it sits in the refrigerator.

Beet Coconut Lime Dressing

 

Ingredients:

2 -3 small beets, cooked and peeled

1/4 cup water

1/4 cup coconut yogurt

2 Tablespoons coconut butter

2 Tablespoons lime juice zest of 1 lime

2 Tablespoons extra virgin olive oil

1 Tablespoon white balsamic vinegar

1 in knob of ginger, peeled and cut into two pieces

1/2 shallot, roughly chopped

1 teaspoon maple syrup


Instructions:

  1. Combine all the ingredients for the Beet Coconut Lime Dressing in a high powered blender and blend for 60 seconds until very smooth. Adding water until desired consistency is reached.

  2. Taste and adjust salt and pepper as needed. Serve immediately. Or you can refrigerate the vinaigrette for about 3-4 days. It will thicken as it sits in the refrigerator.
